Authentic Flavours: Cooking Generational Recipes with Kachi Ghani Oil

These recipes are evidence of the culinary heritage and traditions people have cherished for years. Two oils that have gained popularity in recent years for their fantastic health benefits and distinct taste are Kachi Ghani Mustard Oil and Rice Bran oil.

 Kachi Ghani Oil, even known as cold-pressed mustard oil, has been an integral part of Indian cooking for different centuries. The oil includes the finest quality mustard seeds and is extracted using traditional methods that involve crushing the seeds in a mill. You get a flavourful and aromatic oil that adds a unique and contenting taste to any dish. The robust aroma of Kachi Ghani Oil is one of its essential characteristics, and it can instantly move you to the kitchens of conventional Indian households.

People extract oil from the bran or outer layer of rice grains. It is famous for its high smoke point, making it perfect for deep-frying and high-temperature cooking. In addition, its neutral taste makes this oil stand apart, enabling the flavours of other ingredients to shine through. Palak Paneer

One healthy Indian dish that you can make using Kachi Ghani Oil is Palak Paneer. Palak Paneer is a prevalent Indian dish having spinach and cottage cheese. You can make this dish with ingredients like spinach, onions, paneer (cottage cheese), tomatoes, garlic, ginger, green chillies, garam masala, turmeric powder, cumin powder, salt, fresh cream, and Kachi Ghani oil.

Steps  

- Heat Kachi Ghani Mustard Oil in a pan over normal heat. Add sliced onions and sauté until they get golden brown.

- Then add properly chopped garlic, ginger, and green chillies to your pan. Sauté for one until you get the fragrance.

- Add cut tomatoes and cook until they turn out to be soft and mushy.

- Add washed spinach leaves to your pan and cook until they draw down and allow it to cool.

- Once cooled, put the mixture in a blender and blend it into a proper puree.

- Heat some more Kachi Ghani oil in another pan and add turmeric powder and cumin powder. Stir for a few seconds.

- Put the spinach puree to the pan and blend well and cook properly

- Then cut the paneer cubes and put it nicely in the puree and mix well.

- Put garam masala and salt as per your task and cook for some more minutes.

- Finally, add a blob of fresh cream and mix well and cook for a minute and you are done. 

Chettinad Fish Curry 

It is a flavourful and delicious South Indian dish to make with fish, aromatic spices, and Rice Bran oil. This oil boosts the spice flavours and provides health benefits, and ensures you get taste and health both.

Steps 

- Fry finely chopped onions in 2 tablespoons of oil till golden brown. 

- Add pureed tomatoes and prepare till the oil splits. 

- then stir in Chettinad masala powder, red chilli powder, turmeric powder, and salt. 

- Next, place fish pieces in your pan, coat them with the masala. 

- Cover it and cook for fifteen minutes until tender. 

- Finally, garnish with fresh coriander leaves and eat hot with rice or roti.
